- 1 medium eggplant - 250g
- 1 cup bell pepper, diced - 150g
- 1/2 cup zucchini, diced - 75g
- 1/2 cup onion, diced - 75g
- 1/2 cup cherry tomatoes, halved - 75g
- 1 teaspoon olive oil - 5ml
- 1/2 teaspoon garlic powder - 2g
- 1/2 teaspoon dried oregano - 1g
- 1/4 teaspoon black pepper - 1g
- 1/2 teaspoon salt - 3g
- 1/2 cup shredded mozzarella cheese - 60g
- 1/4 cup grated Parmesan cheese - 25g
- Fresh basil leaves for garnish - optional
Steps
- Preheat the oven to 190°C (375°F).
- Cut the eggplant in half lengthwise and scoop out the flesh, leaving about 1cm of the flesh around the edges to form boats. Chop the scooped-out flesh and set aside.
- Place the eggplant halves on a baking sheet, cut side up, and drizzle with 1 teaspoon of olive oil. Sprinkle with a pinch of salt and pepper. Roast in the preheated oven for 20 minutes.
- In a skillet over medium heat, add the chopped eggplant flesh, diced bell pepper, zucchini, onion, and cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are soft.
- Stir in the garlic powder, dried oregano, salt, and black pepper. Cook for an additional 2 minutes.
- Remove the skillet from heat and stir in the mozzarella and Parmesan cheese until well combined.
- Fill each roasted eggplant half with the vegetable and cheese mixture, pressing down gently to pack it in.
- Return the stuffed eggplants to the oven and bake for another 15 minutes, until the cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving.
