Ingredients

  • 1 medium eggplant - 250g
  • 1 cup bell pepper, diced - 150g
  • 1/2 cup zucchini, diced - 75g
  • 1/2 cup onion, diced - 75g
  • 1/2 cup cherry tomatoes, halved - 75g
  • 1 teaspoon olive oil - 5ml
  • 1/2 teaspoon garlic powder - 2g
  • 1/2 teaspoon dried oregano - 1g
  • 1/4 teaspoon black pepper - 1g
  • 1/2 teaspoon salt - 3g
  • 1/2 cup shredded mozzarella cheese - 60g
  • 1/4 cup grated Parmesan cheese - 25g
  • Fresh basil leaves for garnish - optional

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the eggplant in half lengthwise and scoop out the flesh, leaving about 1cm of the flesh around the edges to form boats. Chop the scooped-out flesh and set aside.
  3. Place the eggplant halves on a baking sheet, cut side up, and drizzle with 1 teaspoon of olive oil. Sprinkle with a pinch of salt and pepper. Roast in the preheated oven for 20 minutes.
  4. In a skillet over medium heat, add the chopped eggplant flesh, diced bell pepper, zucchini, onion, and cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are soft.
  5. Stir in the garlic powder, dried oregano, salt, and black pepper. Cook for an additional 2 minutes.
  6. Remove the skillet from heat and stir in the mozzarella and Parmesan cheese until well combined.
  7. Fill each roasted eggplant half with the vegetable and cheese mixture, pressing down gently to pack it in.
  8. Return the stuffed eggplants to the oven and bake for another 15 minutes, until the cheese is melted and bubbly.
  9. Garnish with fresh basil leaves before serving.
