Ingredients

  • Whole wheat tortillas - 2
  • Shredded mozzarella cheese - 100 grams
  • Bell pepper (mixed colors) - 1 medium, diced
  • Red onion - 1/2 medium, diced
  • Spinach - 1 cup, fresh
  • Zucchini - 1 small, thinly sliced
  • Olive oil - 1 tablespoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sour cream - 2 tablespoons (for serving)
  • Salsa - 2 tablespoons (for serving)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced bell pepper, red onion, and zucchini to the skillet. Sauté for about 5 minutes until they start to soften.
  3. Stir in the fresh spinach, cumin, salt, and black pepper, cooking for an additional 2-3 minutes until the spinach wilts.
  4. Remove the vegetable mixture from the skillet and set aside.
  5. In the same skillet, place one whole wheat tortilla over medium heat. Sprinkle half of the shredded mozzarella cheese evenly over the tortilla.
  6. Add half of the vegetable mixture on top of the cheese and sprinkle the remaining mozzarella cheese over the vegetables.
  7. Top with the second tortilla and cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
  8. Carefully flip the quesadilla using a large spatula and cook for another 3-4 minutes on the other side until golden brown and crispy.
  9. Remove from heat, cut into wedges, and serve with sour cream and salsa.
