Ingredients

  • Lasagna noodles - 4 sheets
  • Olive oil - 1 tablespoon
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Mushrooms - 150 grams, sliced
  • Spinach - 100 grams, fresh
  • Ricotta cheese - 150 grams
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Italian seasoning - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Tomato sauce - 250 grams

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
  3. Add diced zucchini, red bell pepper, and sliced mushrooms to the skillet, cooking for 5-7 minutes until softened.
  4. Stir in fresh spinach and cook until wilted, then season with Italian seasoning, salt, and black pepper. Remove from heat.
  5. In a bowl, combine ricotta cheese, egg, and half of the grated Parmesan cheese. Mix well.
  6. Spread a thin layer of tomato sauce on the bottom of a baking dish (about 1/4 of the sauce).
  7. Place 2 sheets of lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the vegetable mixture, and a layer of mozzarella cheese.
  8. Repeat the layers with the remaining noodles, ricotta mixture, vegetables, and top with the remaining tomato sauce and mozzarella cheese.
  9. Sprinkle the remaining Parmesan cheese on top.
  10. Cover the dish with foil and bake in the preheated oven for 25 minutes.
  11. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  12. Let the lasagna sit for 5-10 minutes before slicing and serving.
