Ingredients

  • Corn tortillas - 4
  • Zucchini - 100 grams, diced
  • Bell pepper - 100 grams, diced
  • Onion - 50 grams, diced
  • Corn - 50 grams (fresh or frozen)
  • Black beans - 100 grams, drained and rinsed
  • Shredded cheese (cheddar or mozzarella) - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Enchilada sauce - 200 grams
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and add the diced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the diced zucchini and bell pepper to the skillet and cook for another 4-5 minutes until slightly softened.
  4. Stir in the corn, black beans, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until everything is heated through. Remove from heat.
  5. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  6. Take a corn tortilla, fill it with the vegetable mixture and a sprinkle of cheese. Roll it up and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
  7. Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
  8. Cover the dish with foil and bake for 15 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh cilantro before serving.
