- Corn tortillas - 4
- Zucchini - 100 grams, diced
- Bell pepper - 100 grams, diced
- Onion - 50 grams, diced
- Corn - 50 grams (fresh or frozen)
- Black beans - 100 grams, drained and rinsed
- Shredded cheese (cheddar or mozzarella) - 100 grams
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Enchilada sauce - 200 grams
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and add the diced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the diced zucchini and bell pepper to the skillet and cook for another 4-5 minutes until slightly softened.
- Stir in the corn, black beans, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until everything is heated through. Remove from heat.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Take a corn tortilla, fill it with the vegetable mixture and a sprinkle of cheese. Roll it up and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
- Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
- Cover the dish with foil and bake for 15 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
