Ingredients

  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Broccoli florets - 100 grams
  • Cauliflower florets - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cream cheese - 100 grams, softened
  • Shredded mozzarella cheese - 100 grams
  • Grated Parmesan cheese - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine sliced zucchini, chopped bell pepper, broccoli florets, cauliflower florets, and halved cherry tomatoes.
  3. In a small pan, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  4. Pour the sautéed garlic and olive oil over the vegetables, then add Italian seasoning, salt, and black pepper. Toss to coat evenly.
  5. Transfer the vegetable mixture to a baking dish and spread it out evenly.
  6. In a separate bowl, mix the softened cream cheese with half of the shredded mozzarella cheese and all the grated Parmesan cheese until well combined.
  7. Dollop the cheese mixture over the vegetables and spread gently.
  8. Sprinkle the remaining mozzarella cheese on top of the dish.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  10. Remove from oven, let it cool for a few minutes, then serve warm.
