- Broccoli florets - 100 grams
- Cauliflower florets - 100 grams
- Cherry tomatoes - 100 grams, halved
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cream cheese - 100 grams, softened
- Shredded mozzarella cheese - 100 grams
- Grated Parmesan cheese - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine sliced zucchini, chopped bell pepper, broccoli florets, cauliflower florets, and halved cherry tomatoes.
- In a small pan, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
- Pour the sautéed garlic and olive oil over the vegetables, then add Italian seasoning, salt, and black pepper. Toss to coat evenly.
- Transfer the vegetable mixture to a baking dish and spread it out evenly.
- In a separate bowl, mix the softened cream cheese with half of the shredded mozzarella cheese and all the grated Parmesan cheese until well combined.
- Dollop the cheese mixture over the vegetables and spread gently.
