- Corn tortillas - 4
- Black beans (canned, drained and rinsed) - 1 cup
- Red bell pepper (diced) - 1/2
- Zucchini (diced) - 1 small
- Onion (diced) - 1/2
- Garlic (minced) - 2 cloves
- Corn (canned or frozen) - 1/2 cup
- Chili powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Salsa - 1 cup
- Shredded cheese (cheddar or mozzarella) - 1/2 cup
- Fresh cilantro (chopped, for garnish) - 2 tablespoons
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until translucent, about 3-4 minutes.
- Add the diced red bell pepper and zucchini to the skillet, cooking for an additional 5 minutes until slightly softened.
- Stir in the black beans, corn, chili powder, cumin, and salt. Cook for another 2-3 minutes until heated through. Remove from heat.
- Spread a thin layer of salsa on the bottom of a baking dish.
- Warm the corn tortillas in a microwave for about 30 seconds to make them pliable.
- Take one tortilla, spoon about 1/4 of the vegetable and bean mixture into the center, and roll it up tightly. Place seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
- Pour the remaining salsa over the top of the enchiladas and sprinkle shredded cheese evenly on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
