- Zucchini - 2 medium (about 300g)
- All-purpose flour - 1/2 cup (60g)
- Chickpea flour - 1/4 cup (30g)
- Nutritional yeast - 2 tablespoons (15g)
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Olive oil - 3 tablespoons (for frying)
- Lemon juice - 1 tablespoon
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.
- In a mixing bowl, combine the all-purpose flour, chickpea flour, nutritional yeast, garlic powder, onion powder, salt, black pepper, paprika, and chopped parsley.
- Add the grated zucchini and lemon juice to the dry ingredients and mix until well combined. The mixture should be thick but manageable.
- Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat. Once hot, scoop about 1/4 cup of the zucchini mixture into the skillet for each fritter, flattening them slightly.
- Cook the fritters for 3-4 minutes on each side or until golden brown and crispy. Add more oil as needed for the second batch.
- Remove the fritters from the skillet and place them on a paper towel to absorb excess oil. Serve warm with a vegan yogurt dip or your favorite sauce.
