Ingredients

  • Wild rice - 100 grams
  • Water - 500 ml
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Green onions - 2, sliced
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the wild rice under cold water to remove any impurities.
  2. In a medium saucepan, bring the 500 ml of water to a boil and add the rinsed wild rice.
  3. Reduce the heat to low, cover, and let it simmer for about 40-45 minutes until the rice is tender and the grains have split open.
  4. While the rice is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and slice the green onions.
  5. In a large bowl, combine the cooked wild rice (let it cool slightly), cherry tomatoes, cucumber, red bell pepper, green onions, and chopped parsley.
  6. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.
  7. Pour the dressing over the salad and toss gently to combine all ingredients.
  8. Serve the salad at room temperature or chilled, garnished with additional parsley if desired.
