- Wild rice - 100 grams
- Water - 500 ml
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Green onions - 2, sliced
- Fresh parsley - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the wild rice under cold water to remove any impurities.
- In a medium saucepan, bring the 500 ml of water to a boil and add the rinsed wild rice.
- Reduce the heat to low, cover, and let it simmer for about 40-45 minutes until the rice is tender and the grains have split open.
- While the rice is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and slice the green onions.
- In a large bowl, combine the cooked wild rice (let it cool slightly), cherry tomatoes, cucumber, red bell pepper, green onions, and chopped parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.
- Pour the dressing over the salad and toss gently to combine all ingredients.
- Serve the salad at room temperature or chilled, garnished with additional parsley if desired.
