- all-purpose flour - 120 grams
- cocoa powder - 30 grams
- baking soda - 1 teaspoon
- salt - 1/4 teaspoon
- granulated sugar - 80 grams
- unsweetened applesauce - 60 grams
- almond milk - 60 ml
- vanilla extract - 1 teaspoon
- coconut oil - 30 grams, melted
- powdered sugar - 100 grams
- vegan butter - 30 grams, softened
- vanilla extract (for filling) - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, mix together the granulated sugar, applesauce, almond milk, vanilla extract, and melted coconut oil until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Scoop tablespoon-sized amounts of batter onto the prepared baking sheet, spacing them 5cm apart.
- Bake for 10-12 minutes, until the edges are set. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- While the cookies are cooling, prepare the filling by beating together the softened vegan butter and powdered sugar in a bowl until creamy. Add the vanilla extract and mix until well combined.
- Once the cookies are cool, take one cookie, spread a generous amount of filling on the flat side, and top it with another cookie to form a sandwich.
- Repeat with the remaining cookies and filling.
