Ingredients

  • all-purpose flour - 120 grams
  • cocoa powder - 30 grams
  • baking soda - 1 teaspoon
  • salt - 1/4 teaspoon
  • granulated sugar - 80 grams
  • unsweetened applesauce - 60 grams
  • almond milk - 60 ml
  • vanilla extract - 1 teaspoon
  • coconut oil - 30 grams, melted
  • powdered sugar - 100 grams
  • vegan butter - 30 grams, softened
  • vanilla extract (for filling) - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix together the granulated sugar, applesauce, almond milk, vanilla extract, and melted coconut oil until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Scoop tablespoon-sized amounts of batter onto the prepared baking sheet, spacing them 5cm apart.
  6. Bake for 10-12 minutes, until the edges are set. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  7. While the cookies are cooling, prepare the filling by beating together the softened vegan butter and powdered sugar in a bowl until creamy. Add the vanilla extract and mix until well combined.
  8. Once the cookies are cool, take one cookie, spread a generous amount of filling on the flat side, and top it with another cookie to form a sandwich.
  9. Repeat with the remaining cookies and filling.
