  • Raw cashews - 100 grams (soaked in water for 4 hours)
  • Nutritional yeast - 3 tablespoons
  • Garlic - 2 cloves
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 100 grams (fresh)
  • Mushrooms - 100 grams (sliced)
  • Cherry tomatoes - 100 grams (halved)
  • Fresh basil - 10 grams (for garnish)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a blender, combine the soaked cashews, nutritional yeast, garlic, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy, adding a little water if necessary to achieve a sauce-like consistency.
  3. On a floured surface, roll out the pizza dough to about 25 cm (10 inches) in diameter.
  4. Place the rolled dough on a baking sheet lined with parchment paper.
  5. Spread the cashew sauce evenly over the pizza base, leaving a small border around the edges.
  6. Distribute the fresh spinach, sliced mushrooms, and halved cherry tomatoes evenly over the sauce.
  7. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  8. Remove from the oven, garnish with fresh basil, slice, and serve hot.
