Ingredients
- whole wheat flour - 1 cup
- almond milk - 1 cup
- flaxseed meal - 2 tablespoons
- baking powder - 2 teaspoons
- baking soda - 1/2 teaspoon
- cinnamon - 1/2 teaspoon
- vanilla extract - 1 teaspoon
- maple syrup - 2 tablespoons
- salt - 1/4 teaspoon
- coconut oil (melted) - 2 tablespoons
Steps
- In a small bowl, combine flaxseed meal with 6 tablespoons of water and let it sit for about 5 minutes to create a flax egg.
- In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the almond milk, melted coconut oil, vanilla extract, and maple syrup. Stir in the flax egg once it's thickened.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
- Preheat your waffle iron according to the manufacturer's instructions.
- Once heated, lightly grease the waffle iron with a little coconut oil. Pour enough batter to cover the surface and close the lid.
- Cook for about 5-7 minutes or until the waffles are golden brown and crisp.
- Repeat with the remaining batter, greasing the waffle iron as needed.
- Serve warm with fresh fruits, maple syrup, or your favorite toppings.
