Ingredients

  • whole wheat flour - 1 cup
  • almond milk - 1 cup
  • flaxseed meal - 2 tablespoons
  • baking powder - 2 teaspoons
  • baking soda - 1/2 teaspoon
  • cinnamon - 1/2 teaspoon
  • vanilla extract - 1 teaspoon
  • maple syrup - 2 tablespoons
  • salt - 1/4 teaspoon
  • coconut oil (melted) - 2 tablespoons

Steps

  1. In a small bowl, combine flaxseed meal with 6 tablespoons of water and let it sit for about 5 minutes to create a flax egg.
  2. In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the almond milk, melted coconut oil, vanilla extract, and maple syrup. Stir in the flax egg once it's thickened.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
  5. Preheat your waffle iron according to the manufacturer's instructions.
  6. Once heated, lightly grease the waffle iron with a little coconut oil. Pour enough batter to cover the surface and close the lid.
  7. Cook for about 5-7 minutes or until the waffles are golden brown and crisp.
