Vegan Tostones
Vegan Tostones are crispy twice-fried plantain slices that are a delightful and crunchy appetizer. Topped with a zesty avocado salsa, they bring a refreshing twist to a classic dish, perfect for sharing or enjoying solo.

Ingredients
- Green plantains - 2
- Avocado - 1 medium
- Cherry tomatoes - 100 grams
- Red onion - 50 grams
- Cilantro - 10 grams
- Lime - 1
- Olive oil - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Steps
- Peel the green plantains and slice them into 2-inch thick pieces.
- In a large pot, heat enough water to cover the plantain slices. Once boiling, add the plantains and cook for about 10 minutes until they are tender but not falling apart.
- Remove the plantains from the water and let them cool slightly. Once cool enough to handle, gently flatten each slice with the bottom of a heavy pan or a flat surface.
- In a frying pan, heat olive oil over medium-high heat. Fry the flattened plantains in batches for about 3-4 minutes on each side until they are golden and crispy. Remove and drain on paper towels.
- While the tostones are frying, prepare the avocado salsa. In a bowl, mash the avocado and mix in diced cherry tomatoes, finely chopped red onion, chopped cilantro, lime juice, salt, and pepper.
- Serve the hot tostones topped with the avocado salsa.
