Ingredients

  • Green plantains - 2
  • Avocado - 1 medium
  • Cherry tomatoes - 100 grams
  • Red onion - 50 grams
  • Cilantro - 10 grams
  • Lime - 1
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Peel the green plantains and slice them into 2-inch thick pieces.
  2. In a large pot, heat enough water to cover the plantain slices. Once boiling, add the plantains and cook for about 10 minutes until they are tender but not falling apart.
  3. Remove the plantains from the water and let them cool slightly. Once cool enough to handle, gently flatten each slice with the bottom of a heavy pan or a flat surface.
  4. In a frying pan, heat olive oil over medium-high heat. Fry the flattened plantains in batches for about 3-4 minutes on each side until they are golden and crispy. Remove and drain on paper towels.
  5. While the tostones are frying, prepare the avocado salsa. In a bowl, mash the avocado and mix in diced cherry tomatoes, finely chopped red onion, chopped cilantro, lime juice, salt, and pepper.
  6. Serve the hot tostones topped with the avocado salsa.
