- Corn tortillas - 4
- Canned black beans - 1 cup (240g), drained and rinsed
- Red onion - 1/4 cup (40g), finely chopped
- Cherry tomatoes - 1/2 cup (75g), halved
- Corn kernels - 1/2 cup (75g), fresh or frozen
- Cilantro - 1/4 cup (15g), chopped
- Avocado - 1 medium, mashed
- Lime - 1, juiced
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Olive oil - 1 tablespoon (15ml)
Steps
- Preheat your oven to 200°C (400°F).
- Arrange the corn tortillas on a baking sheet and brush both sides lightly with olive oil.
- Bake the tortillas in the preheated oven for about 10-12 minutes or until they are crispy and golden brown.
- In a medium bowl, combine the black beans, red onion, cherry tomatoes, corn, cilantro, cumin, chili powder, and salt. Mix well.
- In another small bowl, mix the mashed avocado with lime juice for the creamy sauce.
- Once the tortillas are ready, remove them from the oven and let them cool slightly.
