Ingredients

  • Corn tortillas - 4
  • Canned black beans - 1 cup (240g), drained and rinsed
  • Red onion - 1/4 cup (40g), finely chopped
  • Cherry tomatoes - 1/2 cup (75g), halved
  • Corn kernels - 1/2 cup (75g), fresh or frozen
  • Cilantro - 1/4 cup (15g), chopped
  • Avocado - 1 medium, mashed
  • Lime - 1, juiced
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Olive oil - 1 tablespoon (15ml)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Arrange the corn tortillas on a baking sheet and brush both sides lightly with olive oil.
  3. Bake the tortillas in the preheated oven for about 10-12 minutes or until they are crispy and golden brown.
  4. In a medium bowl, combine the black beans, red onion, cherry tomatoes, corn, cilantro, cumin, chili powder, and salt. Mix well.
  5. In another small bowl, mix the mashed avocado with lime juice for the creamy sauce.
  6. Once the tortillas are ready, remove them from the oven and let them cool slightly.
  7. Top each tortilla with the black bean mixture, and then drizzle with the avocado sauce.
