- Zucchini - 1 medium, diced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 milliliters
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Smoked paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Corn kernels - 150 grams (fresh or frozen)
- Black beans - 1 can (400 grams), rinsed and drained
- Fresh cilantro - a handful, chopped
- Lime - 1, juiced
- Tortilla strips - for garnish
- Avocado - 1, diced
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic, diced bell pepper, carrot, and zucchini, and cook for an additional 5 minutes until the vegetables start to soften.
- Add the canned diced tomatoes, vegetable broth, cumin, chili powder, smoked paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Stir in the corn kernels and black beans, and cook for another 5 minutes until heated through.
- Remove from heat, and stir in the chopped cilantro and lime juice. Adjust seasoning if necessary.
