- Firm tofu - 300 grams
- Coconut yogurt - 100 grams
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Garam masala - 2 teaspoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Canned diced tomatoes - 400 grams
- Coconut milk - 200 ml
- Fresh cilantro - for garnish
- Lemon juice - 1 tablespoon
Steps
- Press the tofu for 15 minutes to remove excess moisture. Cut the tofu into cubes.
- In a bowl, mix coconut yogurt, minced garlic, grated ginger, garam masala, cumin, paprika, turmeric, and salt. Add the tofu cubes and marinate for at least 15 minutes.
- Heat olive oil in a pan over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the marinated tofu to the pan and cook until golden brown on all sides, about 8-10 minutes.
- Stir in the canned diced tomatoes and coconut milk. Bring to a simmer and cook for an additional 10 minutes, stirring occasionally.
- Remove from heat, add lemon juice, and garnish with fresh cilantro before serving.
