Ingredients

  • Firm tofu - 300 grams
  • Coconut yogurt - 100 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Garam masala - 2 teaspoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Canned diced tomatoes - 400 grams
  • Coconut milk - 200 ml
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Press the tofu for 15 minutes to remove excess moisture. Cut the tofu into cubes.
  2. In a bowl, mix coconut yogurt, minced garlic, grated ginger, garam masala, cumin, paprika, turmeric, and salt. Add the tofu cubes and marinate for at least 15 minutes.
  3. Heat olive oil in a pan over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Add the marinated tofu to the pan and cook until golden brown on all sides, about 8-10 minutes.
  5. Stir in the canned diced tomatoes and coconut milk. Bring to a simmer and cook for an additional 10 minutes, stirring occasionally.
  6. Remove from heat, add lemon juice, and garnish with fresh cilantro before serving.
