Ingredients

  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Carrot - 1 medium, julienned
  • Cucumber - 1 small, thinly sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Jalapeño - 1 small, thinly sliced (optional)
  • Vegan mayonnaise - 2 tablespoons
  • Baguette - 2 small
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 1/2 inch thick slices.
  2. In a bowl, mix the soy sauce, rice vinegar, sesame oil, and minced garlic. Add the tofu slices and marinate for at least 10 minutes.
  3. Heat a non-stick skillet over medium heat and cook the marinated tofu slices for about 5 minutes on each side, or until golden brown. Season with salt and pepper.
  4. While the tofu cooks, prepare the vegetables by julienning the carrot, slicing the cucumber, and chopping the cilantro.
  5. Once the tofu is cooked, slice the baguettes open lengthwise. Spread 1 tablespoon of vegan mayonnaise on each baguette.
  6. Layer the cooked tofu inside the baguette, followed by the julienned carrots, cucumber slices, fresh cilantro, and jalapeño slices if using.
