- Firm tofu - 200 grams
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 1 clove, minced
- Carrot - 1 medium, julienned
- Cucumber - 1 small, thinly sliced
- Fresh cilantro - 1/4 cup, chopped
- Jalapeño - 1 small, thinly sliced (optional)
- Vegan mayonnaise - 2 tablespoons
- Baguette - 2 small
- Salt - to taste
- Pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1/2 inch thick slices.
- In a bowl, mix the soy sauce, rice vinegar, sesame oil, and minced garlic. Add the tofu slices and marinate for at least 10 minutes.
- Heat a non-stick skillet over medium heat and cook the marinated tofu slices for about 5 minutes on each side, or until golden brown. Season with salt and pepper.
- While the tofu cooks, prepare the vegetables by julienning the carrot, slicing the cucumber, and chopping the cilantro.
- Once the tofu is cooked, slice the baguettes open lengthwise. Spread 1 tablespoon of vegan mayonnaise on each baguette.
- Layer the cooked tofu inside the baguette, followed by the julienned carrots, cucumber slices, fresh cilantro, and jalapeño slices if using.
