- Firm tofu - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Onion - 1 medium, finely chopped
- Bell pepper - 1, chopped
- Canned tomatoes - 400 grams
- Coconut milk - 200 milliliters
- Curry powder - 1 tablespoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Cilantro - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
- In a bowl, marinate the tofu cubes with 1 tablespoon of olive oil, turmeric, curry powder, salt, and pepper for at least 10 minutes.
- In a large skillet, heat the remaining olive oil over medium heat and sauté the onions until translucent, about 5 minutes.
- Add garlic and ginger to the skillet, cooking for an additional minute until fragrant.
- Stir in the chopped bell pepper and cook for another 3 minutes.
- Add the marinated tofu to the skillet and cook for about 5 minutes, until slightly golden.
- Pour in the canned tomatoes and coconut milk, then add garam masala. Stir well and simmer for 10 minutes, allowing the flavors to meld.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with fresh cilantro, alongside rice or naan if desired.
