Ingredients

  • Firm tofu - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Onion - 1 medium, finely chopped
  • Bell pepper - 1, chopped
  • Canned tomatoes - 400 grams
  • Coconut milk - 200 milliliters
  • Curry powder - 1 tablespoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Cilantro - for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a bowl, marinate the tofu cubes with 1 tablespoon of olive oil, turmeric, curry powder, salt, and pepper for at least 10 minutes.
  3. In a large skillet, heat the remaining olive oil over medium heat and sauté the onions until translucent, about 5 minutes.
  4. Add garlic and ginger to the skillet, cooking for an additional minute until fragrant.
  5. Stir in the chopped bell pepper and cook for another 3 minutes.
  6. Add the marinated tofu to the skillet and cook for about 5 minutes, until slightly golden.
  7. Pour in the canned tomatoes and coconut milk, then add garam masala. Stir well and simmer for 10 minutes, allowing the flavors to meld.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Serve hot, garnished with fresh cilantro, alongside rice or naan if desired.
