- Sweet potato - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Spinach - 100 grams
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Fresh basil - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cube the sweet potato into small pieces, then toss with 1 tablespoon of olive oil, salt, and pepper.
- Spread the sweet potato on a baking sheet and roast for 20 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat and add the minced garlic, cooking for about 1 minute until fragrant.
