  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes into small, even pieces.
  3. In a large mixing bowl, combine sweet potatoes, diced red and green bell peppers, diced red onion, minced garlic, olive oil, ground cumin, smoked paprika, salt, and black pepper. Toss until everything is well-coated.
