- Nutritional yeast - 3 tablespoons
- Plant-based milk - 1 cup (240 ml)
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil (chopped) - 1/4 cup
- Cherry tomatoes (halved) - 1/2 cup
- Pine nuts (optional, for garnish) - 2 tablespoons
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the sweet corn to the skillet and cook for another 3-4 minutes, stirring occasionally until heated through.
- Stir in the nutritional yeast, plant-based milk, lemon juice, salt, and black pepper. Cook for an additional 2-3 minutes until the mixture is warmed and slightly thickened.
- Add the cooked pasta to the skillet along with a bit of the reserved pasta water, tossing to combine until the pasta is well coated with the sauce.
- Remove from heat and stir in the fresh basil and cherry tomatoes. Adjust seasoning if necessary.
- Serve immediately, garnished with pine nuts if desired.
