  • Garlic (minced) - 2 cloves
  • Nutritional yeast - 3 tablespoons
  • Plant-based milk - 1 cup (240 ml)
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil (chopped) - 1/4 cup
  • Cherry tomatoes (halved) - 1/2 cup
  • Pine nuts (optional, for garnish) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the sweet corn to the skillet and cook for another 3-4 minutes, stirring occasionally until heated through.
  4. Stir in the nutritional yeast, plant-based milk, lemon juice, salt, and black pepper. Cook for an additional 2-3 minutes until the mixture is warmed and slightly thickened.
  5. Add the cooked pasta to the skillet along with a bit of the reserved pasta water, tossing to combine until the pasta is well coated with the sauce.
  6. Remove from heat and stir in the fresh basil and cherry tomatoes. Adjust seasoning if necessary.
  7. Serve immediately, garnished with pine nuts if desired.
