- Firm tofu - 300 grams
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Pineapple chunks - 100 grams, canned or fresh
- Carrot - 1 medium, julienned
- Onion - 1 small, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Apple cider vinegar - 2 tablespoons
- Maple syrup - 2 tablespoons
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Sesame seeds - 1 teaspoon (for garnish)
- Green onions - 2 stalks, chopped (for garnish)
Steps
- Press the tofu between paper towels to remove excess moisture for about 15 minutes, then cut it into bite-sized cubes.
- In a bowl, mix the soy sauce, apple cider vinegar, maple syrup, and cornstarch to create the sweet and sour sauce.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove the tofu and set aside.
- In the same pan, add the remaining tablespoon of oil, then sauté the onion and garlic until fragrant, about 2 minutes.
- Add the diced bell peppers, julienned carrot, and pineapple chunks to the pan. Cook for another 5 minutes until the vegetables are tender but still crisp.
- Pour the sweet and sour sauce over the vegetables, stirring well to combine. Return the tofu to the pan and toss everything together until the tofu is well coated in the sauce, cooking for an additional 2-3 minutes.
- Serve hot, garnished with sesame seeds and chopped green onions.
