- large pasta shells - 12 shells
- raw cashews - 100 grams (soaked for 2-4 hours)
- fresh spinach - 150 grams
- nutritional yeast - 3 tablespoons
- lemon juice - 2 tablespoons
- garlic powder - 1 teaspoon
- onion powder - 1 teaspoon
- salt - 1/2 teaspoon
- pepper - 1/4 teaspoon
- olive oil - 1 tablespoon
- marinara sauce - 400 grams
- fresh basil - a handful (for garnish)
Steps
- Preheat your oven to 180°C (350°F).
- Cook the pasta shells in a large pot of salted boiling water for about 8-10 minutes, or until al dente. Drain and set aside to cool.
- In a food processor, combine soaked cashews, spinach, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy.
- Gently stuff each pasta shell with the cashew and spinach mixture and place them in a baking dish.
- Pour the marinara sauce evenly over the stuffed shells, making sure they are well covered.
- Drizzle olive oil on top and cover the baking dish with aluminum foil.
- Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until bubbly.
- Garnish with fresh basil before serving.
