Ingredients

  • large pasta shells - 12 shells
  • raw cashews - 100 grams (soaked for 2-4 hours)
  • fresh spinach - 150 grams
  • nutritional yeast - 3 tablespoons
  • lemon juice - 2 tablespoons
  • garlic powder - 1 teaspoon
  • onion powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • pepper - 1/4 teaspoon
  • olive oil - 1 tablespoon
  • marinara sauce - 400 grams
  • fresh basil - a handful (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cook the pasta shells in a large pot of salted boiling water for about 8-10 minutes, or until al dente. Drain and set aside to cool.
  3. In a food processor, combine soaked cashews, spinach, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy.
  4. Gently stuff each pasta shell with the cashew and spinach mixture and place them in a baking dish.
  5. Pour the marinara sauce evenly over the stuffed shells, making sure they are well covered.
  6. Drizzle olive oil on top and cover the baking dish with aluminum foil.
  7. Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until bubbly.
  8. Garnish with fresh basil before serving.
