- Large white mushrooms - 8 pieces
- Cooked quinoa - 1/2 cup
- Chickpeas, drained and rinsed - 1/2 cup
- Nutritional yeast - 2 tablespoons
- Garlic, minced - 2 cloves
- Fresh parsley, chopped - 2 tablespoons
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Clean the mushrooms with a damp cloth and carefully remove the stems.
- In a mixing bowl, combine the cooked quinoa, chickpeas, nutritional yeast, minced garlic, chopped parsley, olive oil, lemon juice, salt, black pepper, and paprika. Mash slightly to combine, leaving some chickpeas whole for texture.
- Stuff each mushroom cap with the quinoa mixture, pressing down gently to pack it in.
- Place the stuffed mushrooms on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20 minutes, or until the mushrooms are tender and the tops are slightly golden.
