Ingredients

  • 2 ripe avocados
  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh or canned)
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped

  • 1 lime, juiced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 teaspoon chili powder (optional)

Steps

  1. Cut the avocados in half and remove the pit. Scoop out a bit of the flesh to create a larger cavity for the filling and set aside.
  2. In a mixing bowl, combine the black beans, corn, diced red bell pepper, red onion, cilantro, lime juice, cumin, salt, pepper, and chili powder if using. Mix well.
  3. Gently fold in the scooped avocado flesh into the bean mixture until well combined.
  4. Spoon the filling generously into each avocado half.
  5. Serve immediately, garnished with additional cilantro or a lime wedge if desired.
