  • 1/4 cup red bell pepper - diced
  • 1/4 cup corn kernels (fresh or canned)
  • 2 tablespoons red onion - finely chopped
  • 2 tablespoons fresh cilantro - chopped
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Steps

  1. In a mixing bowl, combine the cooked quinoa, black beans, diced tomatoes, red bell pepper, corn, red onion, cilantro, lime juice, and cumin. Mix well to combine.
