- Avocado - 1, sliced
- Fresh mint leaves - 10 leaves
- Fresh cilantro - 10 sprigs
- Lettuce leaves - 2, torn
- Soy sauce - 2 tablespoons
- Peanut butter - 1 tablespoon
- Lime juice - 1 tablespoon
- Maple syrup - 1 teaspoon
- Garlic - 1 clove, minced
- Water - for soaking rice paper
Steps
- Prepare all vegetables by washing and cutting them into thin strips or slices.
- In a small bowl, mix together soy sauce, peanut butter, lime juice, maple syrup, and minced garlic to create the dipping sauce.
- Fill a shallow dish with warm water and soak one rice paper wrapper for about 10-15 seconds or until soft.
- Lay the softened rice paper on a clean, flat surface and place a lettuce leaf at the bottom edge.
- Layer a small amount of carrot, cucumber, red bell pepper, avocado, mint, and cilantro on top of the lettuce.
- Fold the sides of the rice paper over the filling, then roll it tightly from the bottom up to encase the filling completely.
- Repeat the soaking and rolling process for the remaining rice paper wrappers and filling.
- Serve the spring rolls with the dipping sauce on the side.
