- Whole wheat flour - 1 cup
- Cold water - 4 tablespoons
- Olive oil - 3 tablespoons
- Salt - 1/2 teaspoon
- Firm tofu - 200 grams
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Black salt - 1/4 teaspoon
- Fresh spinach - 150 grams, chopped
- Diced onion - 1/2 medium onion
- Olive oil (for sautéing) - 1 tablespoon
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix whole wheat flour, salt, and olive oil until crumbly. Gradually add cold water and knead to form a dough. Wrap in plastic wrap and chill for 15 minutes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté diced onion until translucent, about 5 minutes. Add chopped spinach and cook until wilted. Remove from heat.
- In a blender, combine firm tofu, nutritional yeast, garlic powder, onion powder, turmeric, black salt, and black pepper. Blend until smooth and creamy.
- Add the sautéed spinach and onion mixture to the tofu mixture, stirring until well combined.
- Roll out the chilled dough on a floured surface and transfer to a 9-inch pie dish, pressing it into the bottom and sides.
- Pour the tofu and spinach mixture into the crust, smoothing the top.
- Bake in the preheated oven for 25-30 minutes, until the quiche is firm and slightly golden on top.
- Allow to cool for a few minutes before slicing and serving.
