Ingredients

  • Whole wheat flour - 1 cup
  • Cold water - 4 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1/2 teaspoon
  • Firm tofu - 200 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Black salt - 1/4 teaspoon
  • Fresh spinach - 150 grams, chopped
  • Diced onion - 1/2 medium onion
  • Olive oil (for sautéing) - 1 tablespoon
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix whole wheat flour, salt, and olive oil until crumbly. Gradually add cold water and knead to form a dough. Wrap in plastic wrap and chill for 15 minutes.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté diced onion until translucent, about 5 minutes. Add chopped spinach and cook until wilted. Remove from heat.
  4. In a blender, combine firm tofu, nutritional yeast, garlic powder, onion powder, turmeric, black salt, and black pepper. Blend until smooth and creamy.
  5. Add the sautéed spinach and onion mixture to the tofu mixture, stirring until well combined.
  6. Roll out the chilled dough on a floured surface and transfer to a 9-inch pie dish, pressing it into the bottom and sides.
  7. Pour the tofu and spinach mixture into the crust, smoothing the top.
  8. Bake in the preheated oven for 25-30 minutes, until the quiche is firm and slightly golden on top.
  9. Allow to cool for a few minutes before slicing and serving.
