- Puff pastry - 200 grams (1 sheet)
- Fresh spinach - 150 grams (about 5 cups, packed)
- Firm tofu - 100 grams (crumbled)
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Almond milk - 1 tablespoon (for brushing)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet over medium heat, add the olive oil and sauté the fresh spinach until wilted, about 3-4 minutes.
- In a mixing bowl, combine the wilted spinach, crumbled tofu, nutritional yeast, garlic powder, onion powder, salt, and black pepper. Mix well to form a filling.
- Roll out the puff pastry on a lightly floured surface and cut it into 8 equal squares.
- Place a tablespoon of the spinach filling in the center of each pastry square.
- Fold the corners of each square over the filling to create a triangle, sealing the edges by pressing with a fork.
- Brush the tops of the puffs with almond milk to give them a golden color when baked.
- Arrange the puffs on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes or until golden brown.
