Ingredients

  • Puff pastry - 200 grams (1 sheet)
  • Fresh spinach - 150 grams (about 5 cups, packed)
  • Firm tofu - 100 grams (crumbled)
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Almond milk - 1 tablespoon (for brushing)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet over medium heat, add the olive oil and sauté the fresh spinach until wilted, about 3-4 minutes.
  3. In a mixing bowl, combine the wilted spinach, crumbled tofu, nutritional yeast, garlic powder, onion powder, salt, and black pepper. Mix well to form a filling.
  4. Roll out the puff pastry on a lightly floured surface and cut it into 8 equal squares.
  5. Place a tablespoon of the spinach filling in the center of each pastry square.
  6. Fold the corners of each square over the filling to create a triangle, sealing the edges by pressing with a fork.
  7. Brush the tops of the puffs with almond milk to give them a golden color when baked.
  8. Arrange the puffs on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes or until golden brown.
  9. Remove from the oven and let cool slightly before serving.
