- Long-grain rice - 1 cup

- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Tomato - 1 large, diced
- Vegetable broth - 2 cups
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Frozen peas - 1/2 cup
- Fresh cilantro - for garnish
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced red and green bell peppers to the pan and continue to sauté for another 3-4 minutes until softened.
- Stir in the diced tomato, cumin, paprika, chili powder, salt, and black pepper. Cook for 2-3 minutes, allowing the tomatoes to break down slightly.
- Add the rinsed rice to the vegetable mixture, stirring to coat the rice with the spices and vegetables.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Five minutes before the rice is done, stir in the frozen peas, cover, and allow to finish cooking.
- Once cooked, remove from heat, let it sit covered for 5 minutes, then fluff the rice with a fork.
- Serve hot, garnished with fresh cilantro.
