  • Long-grain rice - 1 cup

  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Tomato - 1 large, diced
  • Vegetable broth - 2 cups
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Frozen peas - 1/2 cup
  • Fresh cilantro - for garnish

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the diced red and green bell peppers to the pan and continue to sauté for another 3-4 minutes until softened.
  4. Stir in the diced tomato, cumin, paprika, chili powder, salt, and black pepper. Cook for 2-3 minutes, allowing the tomatoes to break down slightly.
  5. Add the rinsed rice to the vegetable mixture, stirring to coat the rice with the spices and vegetables.
  6. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
  7. Five minutes before the rice is done, stir in the frozen peas, cover, and allow to finish cooking.
  8. Once cooked, remove from heat, let it sit covered for 5 minutes, then fluff the rice with a fork.
  9. Serve hot, garnished with fresh cilantro.
