  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Mushrooms - 200 grams, finely chopped
  • Canned lentils - 400 grams, drained and rinsed
  • Canned diced tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 200 ml
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional)
  • Fresh basil - for garnish

Steps

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until translucent.
  3. Add the minced garlic, diced carrot, and diced celery to the skillet, cooking for another 3-4 minutes until the vegetables are softened.
  4. Stir in the chopped mushrooms and cook for 5-7 minutes, until they release their moisture and become tender.
  5. Add the drained lentils, canned diced tomatoes, tomato paste, vegetable broth, oregano, basil, salt, and black pepper. Stir well to combine.
  6. Bring the mixture to a simmer, reduce the heat, and let it cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
  7. Taste and adjust seasoning if needed. If using, stir in the nutritional yeast for added flavor.
