- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Mushrooms - 200 grams, finely chopped
- Canned lentils - 400 grams, drained and rinsed
- Canned diced tomatoes - 400 grams
- Tomato paste - 2 tablespoons
- Vegetable broth - 200 ml
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional)
- Fresh basil - for garnish
Steps
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, and diced celery to the skillet, cooking for another 3-4 minutes until the vegetables are softened.
- Stir in the chopped mushrooms and cook for 5-7 minutes, until they release their moisture and become tender.
- Add the drained lentils, canned diced tomatoes, tomato paste, vegetable broth, oregano, basil, salt, and black pepper. Stir well to combine.
- Bring the mixture to a simmer, reduce the heat, and let it cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
- Taste and adjust seasoning if needed. If using, stir in the nutritional yeast for added flavor.
- Serve the lentil Bolognese sauce over the cooked spaghetti and garnish with fresh basil.
