Ingredients

  • all-purpose flour - 150 grams
  • baking soda - 1/2 teaspoon
  • cinnamon - 1 teaspoon
  • salt - 1/4 teaspoon
  • coconut oil - 50 grams, melted
  • brown sugar - 100 grams
  • maple syrup - 2 tablespoons
  • vanilla extract - 1 teaspoon
  • cinnamon sugar (for rolling) - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt until well combined.
  3. In a separate bowl, mix the melted coconut oil and brown sugar until smooth.
  4. Add the maple syrup and vanilla extract to the coconut oil mixture and stir until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Scoop out tablespoon-sized portions of dough and roll them into balls.
  7. In a small bowl, combine the cinnamon sugar for rolling. Roll each dough ball in the cinnamon sugar mixture until fully coated.
  8. Place the coated dough balls on the prepared baking sheet, spacing them about 5 cm apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  10. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
