- all-purpose flour - 150 grams
- baking soda - 1/2 teaspoon
- cinnamon - 1 teaspoon
- salt - 1/4 teaspoon
- coconut oil - 50 grams, melted
- brown sugar - 100 grams
- maple syrup - 2 tablespoons
- vanilla extract - 1 teaspoon
- cinnamon sugar (for rolling) - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt until well combined.
- In a separate bowl, mix the melted coconut oil and brown sugar until smooth.
- Add the maple syrup and vanilla extract to the coconut oil mixture and stir until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop out tablespoon-sized portions of dough and roll them into balls.
- In a small bowl, combine the cinnamon sugar for rolling. Roll each dough ball in the cinnamon sugar mixture until fully coated.
- Place the coated dough balls on the prepared baking sheet, spacing them about 5 cm apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
