  • Carrots - 2 medium
  • Liquid smoke - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Nori sheets - 1 small
  • Olive oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/4 teaspoon
  • Onion powder - 1/4 teaspoon
  • Capers - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Bread or bagels - 2 slices

Steps

  1. Peel the carrots and cut them into thin strips, approximately 1/8 inch thick, resembling lox.
  2. In a bowl, combine liquid smoke, soy sauce, maple syrup, apple cider vinegar, olive oil, black pepper, garlic powder, and onion powder.
  3. Add the carrot strips to the marinade and toss to coat well. Let them marinate for at least 15 minutes.
  4. While the carrots are marinating, cut the nori sheet into small strips or squares.
  5. After marinating, place the carrot strips on a baking sheet lined with parchment paper and sprinkle with torn nori pieces.
  6. Bake at 180°C (350°F) for 10-15 minutes, until slightly tender but not fully cooked through.
  7. Remove from the oven and let cool slightly before serving.
  8. To serve, place the vegan smoked salmon on a slice of bread or bagel, garnish with capers and fresh dill.
