- Apple cider vinegar - 1 tablespoon
- Nori sheets - 1 small
- Olive oil - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/4 teaspoon
- Onion powder - 1/4 teaspoon
- Capers - 2 tablespoons
- Fresh dill - 2 tablespoons, chopped
- Bread or bagels - 2 slices
Steps
- Peel the carrots and cut them into thin strips, approximately 1/8 inch thick, resembling lox.
- In a bowl, combine liquid smoke, soy sauce, maple syrup, apple cider vinegar, olive oil, black pepper, garlic powder, and onion powder.
- Add the carrot strips to the marinade and toss to coat well. Let them marinate for at least 15 minutes.
- While the carrots are marinating, cut the nori sheet into small strips or squares.
- After marinating, place the carrot strips on a baking sheet lined with parchment paper and sprinkle with torn nori pieces.
- Bake at 180°C (350°F) for 10-15 minutes, until slightly tender but not fully cooked through.
- Remove from the oven and let cool slightly before serving.
- To serve, place the vegan smoked salmon on a slice of bread or bagel, garnish with capers and fresh dill.
