- Brown lentils - 1 cup (200g)
- Vegetable broth - 2 cups (480ml)
- Olive oil - 1 tablespoon (15ml)
- Onion, diced - 1 medium (150g)
- Garlic, minced - 2 cloves
- Red bell pepper, diced - 1 medium (150g)
- Tomato paste - 2 tablespoons (30g)
- Soy sauce - 1 tablespoon (15ml)
- Maple syrup - 1 tablespoon (15ml)
- Smoked paprika - 1 teaspoon (5g)
- Ground cumin - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Whole grain hamburger buns - 2
- Fresh parsley, chopped - for garnish (optional)
Steps
- Rinse the brown lentils under cold water and drain.
- In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until the lentils are tender.
- While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 3-4 minutes until the pepper is soft.
- Stir in the tomato paste, soy sauce, maple syrup, smoked paprika, ground cumin, black pepper, and salt, mixing well.
- Once the lentils are cooked, drain any excess liquid and add them to the skillet. Stir until everything is well combined and heated through, about 2-3 minutes.
- Toast the whole grain hamburger buns if desired. Spoon the lentil mixture onto the bottom half of each bun, top with chopped parsley if using, and cover with the other half of the bun.
