Ingredients

  • Black beans - 1 cup, cooked and drained
  • Quinoa - 1/2 cup, cooked
  • Breadcrumbs - 1/4 cup
  • Red onion - 1/4 cup, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 tsp
  • Chili powder - 1/2 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 1 tbsp
  • Avocado - 1 medium, sliced
  • Vegan mayo - 2 tbsp
  • Slider buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced

Steps

  1. In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, breadcrumbs, red onion, garlic, cumin, chili powder, salt, and black pepper to the mashed beans. Mix until well combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, prepare the slider buns by toasting them lightly if desired.
  6. Spread 1 tablespoon of vegan mayo on each bun bottom. Place a lettuce leaf on each bun, followed by the cooked patty, avocado slices, and tomato slices.
  7. Top with the bun tops and serve immediately.
