- Black beans - 1 cup, cooked and drained
- Quinoa - 1/2 cup, cooked
- Breadcrumbs - 1/4 cup
- Red onion - 1/4 cup, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 tsp
- Chili powder - 1/2 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - 1 tbsp
- Avocado - 1 medium, sliced
- Vegan mayo - 2 tbsp
- Slider buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
Steps
- In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, breadcrumbs, red onion, garlic, cumin, chili powder, salt, and black pepper to the mashed beans. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the slider buns by toasting them lightly if desired.
- Spread 1 tablespoon of vegan mayo on each bun bottom. Place a lettuce leaf on each bun, followed by the cooked patty, avocado slices, and tomato slices.
- Top with the bun tops and serve immediately.
