- Vegan shrimp (store-bought) - 200 grams
- Olive oil - 3 tablespoons
- Garlic, minced - 4 cloves
- Red pepper flakes - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Vegan butter - 2 tablespoons
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the vegan shrimp to the skillet and cook for 3-4 minutes, stirring occasionally, until heated through.
- Stir in the lemon juice and vegan butter, allowing it to melt and create a sauce.
- Once the spaghetti is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
- Add the drained spaghetti to the skillet, tossing it with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Season with salt and black pepper to taste, and finish by stirring in chopped parsley.
- Serve immediately, garnished with additional parsley if desired.
