  • Spaghetti - 200 grams
  • Vegan shrimp (store-bought) - 200 grams
  • Olive oil - 3 tablespoons
  • Garlic, minced - 4 cloves
  • Red pepper flakes - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Vegan butter - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the vegan shrimp to the skillet and cook for 3-4 minutes, stirring occasionally, until heated through.
  4. Stir in the lemon juice and vegan butter, allowing it to melt and create a sauce.
  5. Once the spaghetti is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
  6. Add the drained spaghetti to the skillet, tossing it with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  7. Season with salt and black pepper to taste, and finish by stirring in chopped parsley.
  8. Serve immediately, garnished with additional parsley if desired.
