Ingredients

  • Lentils (green or brown) - 100 grams
  • Vegetable broth - 300 ml
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Frozen peas - 50 grams
  • Olive oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Tomato paste - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Dried rosemary - 1 teaspoon
  • Potatoes - 400 grams, peeled and cubed
  • Almond milk - 100 ml
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a pot, bring the vegetable broth to a boil and add the lentils. Cook for about 20-25 minutes until lentils are tender, then drain any excess liquid.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened.
  4. Add the diced carrot and celery to the skillet and cook for another 5-7 minutes until they begin to soften.
  5. Stir in the cooked lentils, frozen peas, soy sauce, tomato paste, thyme, rosemary, salt, and pepper. Mix well and let it cook for another 5 minutes.
  6. Meanwhile, boil the cubed potatoes in a separate pot until tender, about 15 minutes. Drain and return to the pot.
  7. Add the almond milk, nutritional yeast, salt, and pepper to the potatoes. Mash until smooth and creamy.
  8. In a baking dish, spread the lentil and vegetable mixture evenly. Top with the mashed potatoes, smoothing it out with a spatula.
  9. Bake in the preheated oven for about 20 minutes, or until the top is slightly golden.
  10. Remove from the oven and let it cool for a few minutes before serving.
