- Lentils (green or brown) - 100 grams
- Vegetable broth - 300 ml
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Frozen peas - 50 grams
- Olive oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Tomato paste - 2 tablespoons
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Potatoes - 400 grams, peeled and cubed
- Almond milk - 100 ml
- Nutritional yeast - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Steps
- Preheat your oven to 180°C (350°F).
- In a pot, bring the vegetable broth to a boil and add the lentils. Cook for about 20-25 minutes until lentils are tender, then drain any excess liquid.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened.
- Add the diced carrot and celery to the skillet and cook for another 5-7 minutes until they begin to soften.
- Stir in the cooked lentils, frozen peas, soy sauce, tomato paste, thyme, rosemary, salt, and pepper. Mix well and let it cook for another 5 minutes.
- Meanwhile, boil the cubed potatoes in a separate pot until tender, about 15 minutes. Drain and return to the pot.
- Add the almond milk, nutritional yeast, salt, and pepper to the potatoes. Mash until smooth and creamy.
- In a baking dish, spread the lentil and vegetable mixture evenly. Top with the mashed potatoes, smoothing it out with a spatula.
- Bake in the preheated oven for about 20 minutes, or until the top is slightly golden.
- Remove from the oven and let it cool for a few minutes before serving.
