Ingredients

  • Olive oil - 2 tablespoons
  • Yellow onion - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Canned diced tomatoes - 400 grams
  • Chickpeas - 240 grams, drained and rinsed
  • Spinach - 100 grams, fresh
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Avocado - 1, sliced, for serving
  • Crusty bread - for serving

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes until softened.
  2. Add minced garlic, ground cumin, paprika, and cayenne pepper, cooking for another minute until fragrant.
  3. Stir in the canned diced tomatoes (with juices) and chickpeas. Season with salt and black pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Taste and adjust seasoning if needed. Remove from heat.
  6. Serve hot, garnished with fresh cilantro and slices of avocado, alongside crusty bread for dipping.
