- Red bell pepper - 1 medium, diced
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon

- Canned diced tomatoes - 400 grams
- Chickpeas - 240 grams, drained and rinsed
- Spinach - 100 grams, fresh
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
- Avocado - 1, sliced, for serving

Steps
- Heat olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes until softened.
- Add minced garlic, ground cumin, paprika, and cayenne pepper, cooking for another minute until fragrant.
- Stir in the canned diced tomatoes (with juices) and chickpeas. Season with salt and black pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Taste and adjust seasoning if needed. Remove from heat.
- Serve hot, garnished with fresh cilantro and slices of avocado, alongside crusty bread for dipping.
