Ingredients

  • Short-grain rice - 1 cup (200g)
  • Vegetable broth - 2 cups (480ml)
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Onion - 1 small, diced
  • Garlic - 3 cloves, minced
  • Tomato - 1 medium, diced
  • Frozen peas - 1/2 cup (75g)
  • Artichoke hearts - 1/2 cup (120g), quartered
  • Mushrooms - 1 cup (150g), sliced
  • Seaweed (nori or dulse) - 1 sheet, shredded
  • Saffron threads - 1/4 teaspoon
  • Smoked paprika - 1 teaspoon
  • Black salt - 1/2 teaspoon
  • Lemon - 1, for serving
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a medium saucepan, heat the vegetable broth until simmering, then add the saffron threads and let steep.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  3. Add the diced red and green bell peppers, cooking for another 5 minutes until softened.
  4. Stir in the sliced mushrooms, cooking for an additional 3 minutes until they release their moisture.
  5. Add the diced tomato, smoked paprika, and black salt, mixing well. Cook for 2 more minutes.
  6. Pour in the short-grain rice and stir for 1 minute to toast the rice slightly.
  7. Add the saffron-infused vegetable broth and bring to a boil. Reduce to low heat, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
  8. In the last 5 minutes of cooking, gently stir in the frozen peas, artichoke hearts, and shredded seaweed.
  9. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork before serving.
  10. Serve warm, garnished with fresh parsley and lemon wedges.
