- Short-grain rice - 1 cup (200g)
- Vegetable broth - 2 cups (480ml)
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Onion - 1 small, diced
- Garlic - 3 cloves, minced
- Tomato - 1 medium, diced
- Frozen peas - 1/2 cup (75g)
- Artichoke hearts - 1/2 cup (120g), quartered
- Mushrooms - 1 cup (150g), sliced
- Seaweed (nori or dulse) - 1 sheet, shredded
- Saffron threads - 1/4 teaspoon
- Smoked paprika - 1 teaspoon
- Black salt - 1/2 teaspoon
- Lemon - 1, for serving
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a medium saucepan, heat the vegetable broth until simmering, then add the saffron threads and let steep.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the diced red and green bell peppers, cooking for another 5 minutes until softened.
- Stir in the sliced mushrooms, cooking for an additional 3 minutes until they release their moisture.
- Add the diced tomato, smoked paprika, and black salt, mixing well. Cook for 2 more minutes.
- Pour in the short-grain rice and stir for 1 minute to toast the rice slightly.
- Add the saffron-infused vegetable broth and bring to a boil. Reduce to low heat, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
- In the last 5 minutes of cooking, gently stir in the frozen peas, artichoke hearts, and shredded seaweed.
- Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork before serving.
- Serve warm, garnished with fresh parsley and lemon wedges.
