- Garlic - 3 cloves, minced
- Okra - 200 grams, sliced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 ml
- Bay leaves - 2
- Dried thyme - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Vegan shrimp (or other seafood substitute) - 200 grams
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the minced garlic and sliced okra, cooking for an additional 3 minutes until fragrant.
- Add the canned diced tomatoes, vegetable broth, bay leaves, thyme, smoked paprika, cayenne pepper, salt, and black pepper. Bring the mixture to a boil, then reduce to a simmer and cook for 20 minutes.
- Stir in the vegan shrimp and cook for another 5 minutes until heated through. Adjust seasoning with salt, pepper, and lemon juice to taste.
- Remove the bay leaves and serve the gumbo hot, garnished with fresh parsley.
