- all-purpose flour - 200 grams
- baking powder - 10 grams
- baking soda - 2 grams
- salt - 2 grams
- coconut sugar - 50 grams
- almond milk - 60 milliliters
- coconut oil (melted) - 30 grams
- vanilla extract - 5 milliliters
- fresh blueberries - 100 grams
Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and coconut sugar until well combined.
- In a separate bowl, mix the almond milk, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the fresh blueberries until evenly distributed throughout the dough.
- Turn the dough out onto a lightly floured surface and gently pat it into a circle about 2.5 cm thick.
- Cut the dough into 4 wedges and place them on the prepared baking sheet.
