  • all-purpose flour - 200 grams
  • baking powder - 10 grams
  • baking soda - 2 grams
  • salt - 2 grams
  • coconut sugar - 50 grams
  • almond milk - 60 milliliters
  • coconut oil (melted) - 30 grams
  • vanilla extract - 5 milliliters
  • fresh blueberries - 100 grams

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and coconut sugar until well combined.
  3. In a separate bowl, mix the almond milk, melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the fresh blueberries until evenly distributed throughout the dough.
  6. Turn the dough out onto a lightly floured surface and gently pat it into a circle about 2.5 cm thick.
