- Coconut cream - 100 ml
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped

- Red pepper flakes - optional, for heat
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
- In a large skillet, heat olive oil over medium heat. Add the sliced king oyster mushrooms and sauté for about 5-7 minutes until they are golden brown and tender.
- Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Pour in the vegetable broth and bring to a simmer. Stir in the coconut cream and nutritional yeast, mixing well until combined.
- Add lemon juice, salt, and black pepper to taste. If desired, add red pepper flakes for some heat.
- Add the cooked pasta to the skillet, tossing to combine. If the sauce is too thick, add a splash of reserved pasta water to achieve the desired consistency.
- Remove from heat and stir in chopped parsley before serving.
