- Basmati rice - 1 cup
- Water - 2 cups
- Saffron threads - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Green peas - 1/2 cup (fresh or frozen)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch, then soak it for 15 minutes.
- In a small bowl, steep the saffron threads in 2 tablespoons of warm water and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced carrot to the saucepan and cook for another 3 minutes, stirring frequently.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and vegetables for about 2 minutes.
- Pour in the water, saffron infusion (with threads), salt, and black pepper. Stir well to combine.
- Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- After 15 minutes, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, gently mixing in the green peas and allowing them to warm through.
- Serve the saffron rice garnished with fresh parsley.
