Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Saffron threads - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green peas - 1/2 cup (fresh or frozen)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch, then soak it for 15 minutes.
  2. In a small bowl, steep the saffron threads in 2 tablespoons of warm water and set aside.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic and diced carrot to the saucepan and cook for another 3 minutes, stirring frequently.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and vegetables for about 2 minutes.
  6. Pour in the water, saffron infusion (with threads), salt, and black pepper. Stir well to combine.
  7. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  8. After 15 minutes, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  9. Fluff the rice with a fork, gently mixing in the green peas and allowing them to warm through.
  10. Serve the saffron rice garnished with fresh parsley.
