Ingredients

  • Raw cashews - 100 grams
  • Roasted garlic - 1 head
  • Lemon juice - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 100 milliliters

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the top off the head of garlic, drizzle with a little olive oil, wrap in foil, and roast in the oven for 25 minutes until soft and caramelized.
  3. While the garlic is roasting, soak the raw cashews in water for at least 15 minutes, then drain.
  4. In a blender, combine the soaked cashews, roasted garlic (squeezed from the skins), lemon juice, nutritional yeast, olive oil, salt, black pepper, and water.
  5. Blend until smooth and creamy, adding more water as needed to achieve desired consistency.
  6. Taste and adjust seasoning if necessary, then transfer the dip to a serving bowl.
