- Vegetable broth - 2 cups
- Red bell pepper - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes until softened.
- Add the minced garlic, ground cumin, and chili powder to the pan. Stir and cook for an additional 1-2 minutes until fragrant.
- Add the brown rice to the saucepan, mixing it well with the sautéed vegetables and spices.
- Pour in the vegetable broth, and season with salt and black pepper to taste. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- In the last 5 minutes of cooking, gently fold in the drained and rinsed black beans, allowing them to heat through.
- Remove from heat, fluff the rice and beans with a fork, and serve garnished with fresh cilantro.
