Ingredients

  • Canned black beans - 1 cup, drained and rinsed
  • Vegetable broth - 2 cups
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes until softened.
  2. Add the minced garlic, ground cumin, and chili powder to the pan. Stir and cook for an additional 1-2 minutes until fragrant.
  3. Add the brown rice to the saucepan, mixing it well with the sautéed vegetables and spices.
  4. Pour in the vegetable broth, and season with salt and black pepper to taste. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  6. In the last 5 minutes of cooking, gently fold in the drained and rinsed black beans, allowing them to heat through.
  7. Remove from heat, fluff the rice and beans with a fork, and serve garnished with fresh cilantro.
