Ingredients
- 1 cup jackfruit, canned in water or brine, drained and shredded
- 1 cup cooked black beans, mashed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon smoked paprika
- 1 tablespoon maple syrup
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup BBQ sauce, store-bought or homemade
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine shredded jackfruit, mashed black beans, breadcrumbs, chopped onion, minced garlic, soy sauce, smoked paprika, maple syrup, ground cumin, black pepper, and salt. Mix until well combined.
- Shape the mixture into rib-like forms and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25 minutes, or until the edges are golden and crispy.
- Remove from the oven and brush generously with BBQ sauce on both sides.
- Return the ribs to the oven and bake for an additional 10 minutes.
- Serve hot with extra BBQ sauce on the side.
