Ingredients

  • 1 cup jackfruit, canned in water or brine, drained and shredded
  • 1 cup cooked black beans, mashed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon smoked paprika
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup BBQ sauce, store-bought or homemade

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine shredded jackfruit, mashed black beans, breadcrumbs, chopped onion, minced garlic, soy sauce, smoked paprika, maple syrup, ground cumin, black pepper, and salt. Mix until well combined.
  3. Shape the mixture into rib-like forms and place them on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 25 minutes, or until the edges are golden and crispy.
  5. Remove from the oven and brush generously with BBQ sauce on both sides.
  6. Return the ribs to the oven and bake for an additional 10 minutes.
  7. Serve hot with extra BBQ sauce on the side.
