- quinoa - 1 cup (uncooked)
- water - 2 cups
- black beans - 1 cup (cooked and drained)
- carrot - 1 medium (grated)
- red bell pepper - 1/2 cup (diced)
- green onion - 2 (finely chopped)
- garlic - 2 cloves (minced)
- ground flaxseed - 2 tablespoons
- water (for flax egg) - 6 tablespoons
- cumin - 1 teaspoon
- smoked paprika - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- breadcrumbs - 1/2 cup
- olive oil - 2 tablespoons (for cooking)
Steps
- Rinse the quinoa under cold water and then combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
- While the quinoa is cooking, prepare the flax egg by mixing the ground flaxseed with 6 tablespoons of water in a small bowl. Let it sit for about 5 minutes until it becomes gel-like.
- In a large mixing bowl, combine the cooked quinoa, black beans, grated carrot, diced red bell pepper, chopped green onion, minced garlic, cumin, smoked paprika, salt, and black pepper. Mix well.
- Add the flax egg and breadcrumbs to the mixture and stir until combined. If the mixture is too wet, add more breadcrumbs as needed.
- Form the mixture into 4 equal-sized patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- Serve the quinoa burgers on buns with your favorite toppings such as lettuce, tomato, avocado, and vegan mayo.
