Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Black beans - 1 can (400g), drained and rinsed
  • Cherry tomatoes - 1 cup, halved
  • Corn - 1 cup, fresh or frozen
  • Red bell pepper - 1 medium, diced
  • Avocado - 1 medium, diced
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed and quinoa is fluffy.
  3. While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the diced red bell pepper and corn, sauté for about 5 minutes until tender.
  4. Add the black beans, cumin, salt, and black pepper to the skillet. Stir and cook for an additional 5 minutes until heated through.
  5. Once the quinoa is cooked, fluff it with a fork and divide it between two bowls.
  6. Top each bowl with the sautéed vegetable mixture, halved cherry tomatoes, diced avocado, and chopped cilantro.
  7. Drizzle lime juice over the bowls and serve immediately.
