- Quinoa - 1 cup
- Water - 2 cups
- Black beans - 1 can (400g), drained and rinsed
- Cherry tomatoes - 1 cup, halved
- Corn - 1 cup, fresh or frozen
- Red bell pepper - 1 medium, diced
- Avocado - 1 medium, diced
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed and quinoa is fluffy.
- While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the diced red bell pepper and corn, sauté for about 5 minutes until tender.
- Add the black beans, cumin, salt, and black pepper to the skillet. Stir and cook for an additional 5 minutes until heated through.
- Once the quinoa is cooked, fluff it with a fork and divide it between two bowls.
- Top each bowl with the sautéed vegetable mixture, halved cherry tomatoes, diced avocado, and chopped cilantro.
- Drizzle lime juice over the bowls and serve immediately.
