- Quinoa - 1/2 cup
- Water - 1 cup
- Chickpea flour - 1/4 cup
- Carrot - 1 medium, grated
- Spinach - 1 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
Steps
- Rinse the quinoa under cold water and combine it with 1 cup of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
- Once cooked, fluff the quinoa with a fork and let it cool slightly.
- In a mixing bowl, combine the chickpea flour, grated carrot, chopped spinach, minced garlic, chopped onion, olive oil, nutritional yeast, cumin, paprika, salt, black pepper, and baking powder.
- Add the cooked quinoa to the mixture and stir until well combined.
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, flattening each scoop slightly.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy on the outside.
- Remove from the oven and let cool slightly before serving.
