  • Raw cashews - 100 grams
  • Nutritional yeast - 3 tablespoons
  • Unsweetened almond milk - 150 ml
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon (optional for heat)
  • Diced tomatoes - 100 grams (canned or fresh)
  • Chopped fresh cilantro - 2 tablespoons (for garnish)

Steps

  1. Soak the raw cashews in water for at least 30 minutes, then drain and rinse.
  2. In a blender, combine the soaked cashews, nutritional yeast, almond milk, lemon juice, garlic powder, onion powder, smoked paprika, salt, and cayenne pepper (if using). Blend until smooth and creamy.
  3. Transfer the blended mixture to a saucepan over medium heat, and stir in the diced tomatoes.
