Ingredients

  • Raw cashews - 1 cup (150g)
  • Nutritional yeast - 1/4 cup (25g)
  • Almond milk - 1/2 cup (120ml)
  • Lemon juice - 2 tablespoons (30ml)
  • Garlic powder - 1 teaspoon (5g)
  • Onion powder - 1 teaspoon (5g)
  • Ground cumin - 1/2 teaspoon (2g)
  • Smoked paprika - 1/2 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Fresh jalapeño, minced - 1 small (15g)
  • Chopped fresh cilantro - 2 tablespoons (8g)
  • Diced tomatoes (canned or fresh) - 1/2 cup (75g)

Steps

  1. Soak the raw cashews in water for at least 2 hours or overnight, then drain and rinse them.
  2. In a blender, combine the soaked cashews, nutritional yeast, almond milk, lemon juice, garlic powder, onion powder, ground cumin, smoked paprika, and salt.
  3. Blend until the mixture is completely smooth and creamy, adding more almond milk if necessary to reach your desired consistency.
  4. Pour the blended mixture into a small saucepan and heat over medium-low heat, stirring constantly until warm.
  5. Add the minced jalapeño, diced tomatoes, and chopped cilantro to the queso, mixing well.
  6. Continue to heat for another 2-3 minutes, allowing the flavors to meld together.
